     Ingredients

     - 45ml olive oil

     - 1 bay leaf

     - 6 curry leaves

     - 5ml black mustard seeds

     - 2 chillies, seeded and finely chopped

     - 2.5 cumin seeds

     - 2.5ml fennel seeds

     - 5ml salt

     - 15ml garlic

     - 5ml turmeric paste

     - 45ml masala

     - Fresh coriander, chopped

     - 4x250ml beef stock

     - 500g dhal (red or yellow lentils)

     To Serve

     - Roti, rice or bread

     Method

     1. Soak the dhal in water for 30 minutes. Rinse and add clean water.

     2. Heat the oil in a large pot on medium heat. Add the bay leaf, cardamom pods, cinnamon stick, curry leaves, onions, mustard seeds, chillies, cumin seeds and fennel seeds, and fry for about 10-15 minutes. Add a little water.

     3. Add the salt, garlic, turmeric paste and masala. Add a little water and cook for about 5 minutes.

     4. Add the dhal to the spice mixture, as well as the coriander. Mix through and add the beef stock.

     5. Place the lid on the pot and let the mixture simmer for about 30-35 minutes or until the dhal is properly cooked. Stir occasionally.

     6. To serve, serve with roti, rice or bread, pickled red onion and crispy fried onions.
